Green Salad for Traveling or Waiting

Appetizers, Salads, Dressings, Soups, Miscellaneous, Beaman Family

Ingredients

2 carrots, finely grated

1 stalk celery, chopped

6 spinach leaves or other dark greens

1/2 head iceberg, broken into bitesize

1/4 head cabbage, shredded

1 small can black olives (drained)

1/4 lb grated or crumbled cheese (feta is great, or sharp cheddar, or your family’s favorite)

Directions

In a large salad bowl place 1/2 c. of salad dressing--Greek, Italian, or your family’s favorite.
In the dressing place grated carrots and celery.
Do not stir.
Lay in cabbage and spinach leaves, then lettuce.
Do not mix.
Scatter olives and cheese over top.
Store in cool place.
At mealtime, toss and serve

This was always a favorite at our Methodist family suppers. And easy for the Mom that was bringing it too! Tailor it to your family’s likes and take it on picnics, group dinners, or to tailgate parties!
